Bacteria form biofilms and produce membrane vesicles in order to survive in the environment. In foods, biofilm formation by bacteria is known to age foods and promote food spoilage, but the mechanism of formation remains unclear. Membrane vesicle production, which has been the focus of much attention in recent years, is also considered to be involved in biofilm formation and bacterial interactions, but its formation and dynamics remain unknown. In this study, lactic acid bacteria are used to elucidate these mechanisms. |
