Research content
As increasing attention is being paid to the impacts of food systems—from production and consumption to waste—on both human health and the environment, the development of a sustainable society has become an urgent global challenge. This laboratory aims to create a society in which people and the environment can thrive together through food-centered approaches. Research focuses on upcycling food waste into valuable resources, the development and evaluation of environmentally friendly biodegradable materials for agricultural applications, and the development of highly nutritious foods that are safe and accessible to diverse populations, including those with food allergies.
