This laboratory aims to create a society in which people and the environment can thrive together through food-centered approaches. Research focuses on upcycling food waste into valuable resources, the development and evaluation of environmentally friendly biodegradable materials for agricultural applications, and the development of highly nutritious foods that are safe and accessible to diverse populations, including those with food allergies. |
